Chicken Wrapped Jalapeño Poppers

Nothing says classic backyard barbecue more than barbecue chicken and jalapeno poppers. So why lot combine them and make something that explodes with flavor? Well, that exactly what I did with this recipe.

Ingredients

3 lbs. Boneless Skinless Chicken Thighs
1 lb. Thick Cut Bacon (about 16 pieces)
6 Fresh Jalapenos
1.5 lb. Shredded Cheddar Cheese
8 oz. Cream Cheese (half block)
½ cup Mayonnaise
1 Tbs. Ranch Seasoning Mix
Season to taste Salt, Pepper and Garlic
2 Cups Killer Hogs The BBQ Sauce


Instructions

  1. Cook 4 pieces of bacon, drain on a paper towel, chop and set aside.
  2. Slice jalapenos, remove seeds, rinse and set aside.
  3. Mix cream cheese, mayonnaise, shredded cheddar cheese, ranch mix and chopped cooked bacon.
  4. Stuff jalapenos with cream cheese mixture.
  5. Wrap stuffed jalapenos with a piece of chicken.
  6. Season chicken stuffed jalapenos with salt, pepper and garlic (SPG).
  7. Wrap each Piece of chicken with a piece of bacon. Secure with a toothpick or tuck bacon into itself.
  8. Season the bacon wrapped chicken with your favorite BBQ rub. I like something a little sweet and smokey. My go to BBQ rub is Killer Hogs The BBQ Rub.
  9. Place chicken on baking sheet lined with parchment paper.
  10. Cook on smoker for approximately 2 hours.
  11. Heat BBQ Sauce in a small sauce pan on the grill for about 20 minutes. Again, my go to sauce for all things barbecue is Killer Hogs The BBQ Sauce.
  12. After 20 minutes drizzle sauce over each piece chicken, lightly brush and coat evenly.
  13. Cook for another 10-20 minutes to allow sauce to setup and get tacky.
  14. Chicken is done when the internal temperature reached 165 degrees about 2.5 hours.

Tips:If you prefer a more cooked bacon texture don’t be afraid to cooked the chicken past 165 degrees. I use chicken thighs just for this reason. Chicken thighs tend to be moist and a lot more forgiving. These chicken stuff jalapeno peppers are delicious by themselves. I like one dish meals and serve over a bed of garlic mashed potatoes.
