Food Prep & Fuel

When it comes to BBQ food prep and fuel, we recommend placing foil pouches between or on the flame tamers and right next to the far right or left burner, if possible. A smoker tray typically includes clear instructions on where to position it on the grill.

For pans and foil pouches, ensure you punch holes on the covering using a fork. Doing so allows the smoke to escape and impart your food with the rich, smoky flavor you desire.

Once you preheat the grill as usual and adjust the wood chip burner to a minimum, add your foil setup or smoker box then shut the lid tight. The chips will then smolder. Keep your eyes peeled for blue smoke that is clean and perfect for uniform flavor distribution. It’ll be the go-ahead to place your food on the grill.

Remember to keep the lid shut for the smoke to remain trapped and absorbed by the food. Keep in mind that various wood chips infuse different bursts of flavor. Moreover, you have free rein to split the wood chunks into smaller portions for faster burning in the grill.
