Spicy Carne Asada Tacos w/ Grilled Corn Salsa by Jason Glover

Ingredients

1 Batch Carne Asada (marinate in advance for 2-10 hours)
12 to 16 Corn or Flour Tortillas (or Combo) if you prefer
1 Batch of Corn Salsa
Toppings: Crumbled Queso Fresco, Sour Cream, Sliced Radishes and Jalapenos for extra spicy

Ingredients for Carne Asada

2-3 lbs Skirt Steak
¼ cup Lime Juice
¼ cup Orange Juice (Fresh)
¼ cup Low Sodium Soy Sauce
10 cloves Garlic (Pressed or Minced)
3 tbsp Avocado Oil
2 tsp Ground Cumin
2 tsp Dried Oregano
2 tsp Chipotle Chili Powder
½ tsp Kosher Salt
½ cup Cilantro - Don’t need to chop
1 Large Onion, cut into large pieces

Ingredients for Corn Salsa

2-3 lbs Skirt Steak
2 Red Jalapeños, Seeded and Minced
6 ears Fresh Shucked Corn
3 tbsp Olive Oil, Divided
½ cup Minced Red Onion
½ cup Chopped Cilantro
1 tsp Grated Lime Rind
2 tbsp Lime Juice
1 tsp Kosher Salt

Instructions

Carne Asada

  1. MARINADE: In a medium bowl, stir together all the ingredients except the cilantro and onions. Pour the marinade into a large dish or Ziploc bag, add the cilantro and onion. Add the meat - make sure to flip. Cover and refrigerate for 2-10 hours. NOTE: Make your Corn Salsa while the Carne Asada is marinating.
  2. GRILL: Remove the meat from the fridge about 30 minutes prior to grilling. Preheat the grill on medium-high heat (aim for 450-475ºF.) Remove the steak from the marinade and discard. Oil the grates to prevent sticking. Grill the steak for 3-5 mins per side until desired temp (Med Rare 135ºF, Med 145ºF). Rest meat for 5-7 mins. Slice against the grain. Serve with Grilled Salsa.

Corn Salsa

  1. GRILL: Preheat grill to medium-high. Brush corn with 1 tablespoon of oil. Grill, uncovered, turning often, until charred, 15 to 20 minutes. Cut kernels from cobs. Combine corn, remaining 2 tablespoons oil, onion, and remaining ingredients. Note: Salsa will last up to one week refrigerated and can be added to salads, chicken, and even eggs and sausage.

Tacos

  1. Assemble: Grill up the Tortillas - Just a couple of minutes on each side - these can be grilled directly on the grates. Add Carne Asada, top with Grilled Corn Salsa, crumbled queso fresco, sour cream, sliced radishes and extra jalapeno slices if you want your tacos extra, extra spicy!
